Peach & Thyme Galettes
Crispy puff pastry, juicy peaches, and earthy thyme… This dreamy combination is the essence of late summer baking. These Peach & Thyme Galettes are delicate, rustic, and filled with golden, syrupy flavour — the kind of treat that looks impressive but takes almost no time to put together.

Ingredients you’ll need:
1 sheet of puff pastry (ready-rolled is perfect)
2 ripe peaches, thinly sliced
2–3 tbsp maple syrup
A few sprigs of fresh thyme (even better when home grown)
1 egg (for egg wash)
Optional: Demerara sugar for extra crunch
How to Make Peach & Thyme Galettes
Add syrup & thyme
Drizzle your parchment with with maple syrup and scatter a few thyme leaves over the top.Layer the peaches
Arrange peach slices by overlapping them. Four slices per galettes is adequate.Prep the pastry
Roll out your puff pastry and cut into rustic rectangles (perfect for individual galettes). Place on top of the peach slices.Crimp & finish
Gently crimp the pastry edges using a fork around the borders to hug the fruit. Brush the crust with egg wash and sprinkle with demerara sugar if desired.Bake until golden
Bake at 180C (370F) for 12-14 minutes, or until the pastry is puffed and golden and the peach juices are bubbling.Sprinkle & serve
Let them cool slightly before sprinkling with icing sugar and serving warm with crème fraîche, mascarpone, or a scoop of vanilla ice cream.
Tips & Tricks
Use ripe but firm peaches – Overripe ones release too much liquid and can make the pastry soggy.
Chill your pastry again before baking – A quick 10 minutes in the fridge helps it puff better.
Add a pinch of salt – Just a tiny sprinkle over the fruit before baking enhances the natural sweetness.
Serve with extra maple syrup – For a sweeter finish, drizzle over extra syrup.

Peach & Thyme Galettes

Peach & Thyme Galettes — golden puff pastry, maple-drizzled peaches, and fresh thyme for a little floral magic.
Serves 8
250g ready-made puff pastry
2 peaches, sliced
A few sprigs of fresh thyme, leaves picked
2-3tbsp 100% pure Canadian maple syrup
1 egg, for the egg wash
Method
Preheat your oven to 180C/160C fan/350F and line a baking tray with parchment paper.
Drizzle a little maple syrup onto the tray, the sprinkle over a few thyme leaves.
Top with 4 slices of peach.
Roll your pastry to 3-4mm thick then cut rectangles approximately 12cm long x 8cm wide.
Place a rectangle of pastry over the sliced peaches.
Repeat steps 2-5, leaving enough space on your baking tray for each one to puff up.
Whisk your egg and use a pastry brush to egg-wash each individual galette.
Put the galettes in the oven for 12-14 minutes until the pastry is puffed up and golden in colour.
Leave to cool for 5 minutes before dusting with icing sugar and serving warm with crème fraîche, vanilla ice cream or mascarpone.
